Ted's Simple Summer Specialities
Ted the dog has put together a couple of his favourite simple summer specialities to enjoy in the summer months.
Summer Risotto
225gm Arborio rice
1.5 litres of hot vegetable stock
1 small onion diced
1 cup of fresh garden peas
30gm butter
100gms parmesan cheese grated
2tbsp olive oil
Method
- Sweat the onion in the olive oil
- Add the rice and stir for a few minutes over a medium heat
- Add a ladleful of hot stock and stir till absorbed
- Keep adding stock ladle by ladle, stirring all the while till all the stock has been absorbed, it takes about 20 minutes
- Turn the heat off, add butter and parmesan then leave to sit for a few minutes
- Shake the pot/pan to mix rather than stirring
Easy Strawberry Yoghurt Ice Cream
500gms of English strawberries
150gms icing sugar
1 tsp vanilla essence
500gm Organic Greek yoghurt
Method
- Liquidise the strawberries, sugar and vanilla
- Fold through yoghurt
- Either freeze in ice lolly moulds or freeze in a shallow dish
- Beat with a hand held whisk after 2 hours
- Try to whisk every hour after that till frozen
- If you have an ice cream machine obviously use it!
