Jamie has been working David Bez of Salad Pride (book available here) on his latest project which involves taking his concept and turning it into a business operating in central London.
Project Workflow:
· Scope a detailed understanding of the project’s requirements with David and turn this into a business
· Create a master business plan & a one site plan
· Capture and understand the customers & stakeholders requirements
· Identify the ‘types’ of catering and final delivery
· Develop a project plan that covers all key milestone, such as, lease, legal, processers & procedures
· Create a business concept to roll out
· Attendance to key meeting, briefing and design days
· Develop a strategy around the design, operational specifications, M&E overview, presence, etc for the café, events spaces & serviced spaces
· Review and build on the feasibility study of the local area, assess competition, food and drink trade and recognise other key opportunities
· Analysis of business areas, processes and issues to be addressed, data gathering
· Investigate other potential revenue streams
· Appraisal of the food and beverage market in the catchment area and what the refurbished site could profitably deliver
· Introduce key suppliers, from ‘eco’ kitchen fitters, equipment suppliers, chemicals to wine
