Jamie Grainger-Smith with the Shoreditch Trust and Terrence Higgins, set up the eco-chef charity The Blue Marble Trust. The charity supports and nurtures young people and adults to develop a long and fulfilling career in food and hospitality by becoming 'green/eco chefs'.
